Extra Crispy Southern BBQ Leg Quarters

Oh how I LOVE to grill. It is one of my favorite ways to make food. So easy, super yummy, AND no cleanup is required.  Why wouldn’t one grill?

All family members here love them some homemade BBQ sauce, grilled food, and dark meat chicken. Mmmmm mmmm…it does a body good! We also love bold tasting food. No spices need-not-apply in these parts.

These extra crispy leg quarters are so scrumptious you will wish you had more to grill…and eat. We like them charred and crispy baby!

So, let’s get down to business…(***please note that my recipes posts will be relatively short in regards to writing.  When it comes to food I like to get right down to it)! You’re Welcome (wink wink)!!

Supplies Needed:

Instructions:

  • Prep time: 5 mins
  • Cook time: 55 mins
  • Total time: 60 minutes
  1. Preheat grill on medium-high heat. Make sure to clean the grill too!
  2. Put all spices above into a bowl
  3. Stir together with a fork
  4. Place chicken on baking sheet (or plate) skin side down. Season bottom of leg quarters. Don’t be shy with the spices y’all. More spice = more nice.
  5. Flip chicken over. Season tops of chicken. Slather it baby!! Remember more spice = more nice. You should use all of the spices
  6. Place leg quarters on grill. Grill for 2-5 min on each side (depending on how hot your grill gets). ***Watch out for flare-ups! Leg quarters are super juicy and they like to catch on fire
  7. Turn grill to low or med-low. Grill for 15 minutes. Check often to flip (you will flip the chicken multiple times, about 8 times). Again, watch for flare-ups
  8. Turn off 1/2 of the burners. You will be finishing the chicken on indirect heat. We have four burners on our grill. We keep the two on the right on and turn the two on the left off. We move all the chicken to the left (with no burners on).  Keep the other half of the burners on low-medium (about 350-400 degrees on our grill). Cook chicken on indirect heat, skin-side up for about 20 min
  9. Now it’s time to add the bbq sauce baby (older kids LOVE doing this part). Oh yeah. Flip chicken skin side down. Slather that BBQ sauce on. Cook for 5 min on indirect heat. Flip chicken, add sauce, and cook for another 5 min
  10. Move the chicken over to direct heat and cook on each side for one minute on medium-high to get that BBQ sauce in there! (optional)

***Cooking times may vary according to grill. When the juices run clear the chicken is done.
